Homemade Peppermint Marshmallow Squares

Last night Liz made a batch of homemade marshmallows. While I’m not a big fan of marshmallows, the whole process was pretty interesting to see (particularly getting the sticky substance out of the pan to begin with).

This batch has a particularly pepperminty flavor, which is heightened by a layer of crushed candycanes sprinkled on top.

This batch (also pepperminty) has a clean top. Apparently, like her fondant cakes, a combination of powdered sugar and cornstarch are used to help prevent against accidental sticking, and for ease of handling.

Closeup of the individual marshmallow squares. I’m trying to imagine these guys floating in a big mug of hot chocolate…
