Staying In, Saturday Night


Liz and I spent a quite night in this evening, making a dish that we both liked (back from the South Beach Diet days): Coconut Chicken.

Quite delicious, and not too complicated to make, either.

Ugh. It’s like that joke is coming, and you can’t do anything about it. Sorry about that.


A quick view of some utensils. I didn’t decide to photograph things until we were about halfway through the process.


Liz stole the camera away from me, while I was stirring the chicken.


Mmmmmmm. coconutty.

Although, truth be told – the coconut isn’t all that strong. It’s a nice mixture of things: coconut milk, cumin, tumeric, lemon peel, garlic. This dish has a voluminous aroma to it, and really fills the kitchen/house up. In a good way.


Add a little risotto and wine, and dinner’s ready. Liz and I spent a long time at the table, eating, sipping wine and just talking. Great, great evening – very relaxing, and good to just take our time, enjoying the food and one another’s company.
