This, Apparently, is What Excites Me Now

I was out shopping in the suburbs (running some errands, and hit up a local Mariano’s) when I came across some newer frozen veggie options.
Ever since we discovered cauliflower mashed potatoes, that’s been a nice go-to that feels like cheating (but technically isn’t, since it’s made with cauliflower). That said, it’s also made of a great deal of sodium, so there’s your trade-off.
But pasta made from zucchini and lentils? Risotto made from cauliflower and butternut squash? I’m sure they’re pale comparisons, but I’ll take ’em.
Liz reminded me that technically, we’re not supposed to have butternut squash on Phase 1 yet (there are a handful of veggies that are more for phase 2 like sweet peas, sweet potatoes, and carrots). But hey, two out of three ain’t bad.
I’m a bit wary of the cauliflower stuff, to be honest. So far the mashed potato cauliflower things I’ve tried have been decent, but anything else outside of that has just tasted like bland mush.
When you don’t have alcohol, or bread, or pasta, or sugar… this feels a bit like cheating. Like I found some kind of backdoor.
