I’ve actually really liked the Impossible burger, and cooked it up a few times. It’s pretty tasty, though a bit high on the sodium side for me.
Lately, I’ve taken to just converting the burger patties into actual meatballs that I end up cooking with some pasta sauce. This, combined with a brand of chickpea spaghetti noodles I’ve found, makes for a quite tasty (and surprisingly fully vegetarian) meal.
Today I was shopping at Mariano’s and came across this small package of plant-based meatballs. I was partially tempted (until I saw just how crazy high the sodium was). But seeing the expiration date on this thing is what made me chuckle. And seemed like it was worth a photo.
